
I mean, the title says it all, yes? Here we go again!
This week's theme, in honor of Canada Day and Independence Day, was holiday food! My office had a holiday potluck today and I signed up to bring pasta salad. Something that I'd never made before. Trying out new recipes with your coworkers is iffy. On one hand, if it's good, everyone loves you. But, on the other hand, if it's not good, you can be the talk of the office for weeks. Luckily, this time, I got lucky!
One of my favorite holiday foods is Pasta Salad. Yum, yum, yummy, yum yum! I found this recipe and just ran with it! Just in case you're feeling lazy, here's the recipe:
Classic Macaroni Salad
1 cup mayonnaise
1 tablespoon vinegar
1 tablespoon fresh lemon juice
1 tablespoon prepared mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
8 oz elbow macaroni, cooked and drained
1 cup chopped celery
1 cup chopped green or red pepper (I used red)
1/4 cup chopped onion (I used purple onion)
1. Combine first 7 ingredients
2. Stir in remaining ingredients
3. Cover, chill
Finally, purple onion. Now, I know it's supposed to be called a "red onion" but seriously, look at this
Exactly which part of that is red?? They're PURPLE (and delicious). It's like calling the sky green people. Purple Onions for-ev-a!!

So, let's review:
1. Was it easy? Yes! Read the recipe! This was a cinch!
2. Was it good? I loved it! My coworkers ate about 3/4 of it so I'm guessing they liked it too!
3. Would I make it again? Absolutely!
