Whip It Up! Week 7 (A Week With No Pictures) - UPDATED! Pictures!

UGH! I've had such a frustrating day! As I mentioned yesterday, the week has really just gotten away from me. The further behind I got on my to do list, the more I felt like I was losing control of everything. Which leads me to the fact that I can't find the little thingie (I believe that's the technical term) that holds my mini card to download my pictures onto the computer. I'm so mad because this week I actually took quite a few pictures of my delicious new recipe! I have no idea what could have happened to it. It's not in my purse, it's not on my bar, it's not in the couch cushions or on the dining room table. Maybe Colin ate it. That would explain why he was acting like such a twit this evening. As soon as I find it, I will post the photos that go along with this entry.

The past few weeks, I haven't been following the theme at all. This week I already had a salad in mind that I wanted to try, but like I said, this week ended up much busier than I anticipated and so I ended up trying a new crock pot recipe instead. As per usual, I lifted this off of my friend Julie's blog, and as per usual, it was awesome!

Pulled BBQ Chicken

3 boneless skinless chicken breasts
6 oz. bar-be-que sauce **
1/4 c. zesty Italian dressing
1T Worcestershire Sauce
1/8 c. brown sugar
1 t. salt
1/2 t. black pepper
1 t. garlic powder

Mix all ingredients in crock pot. Cook on high 3 to 4 hours or low 6 to 8 hours. Turn crock pot off, shred with two forks and stir in sauce. Let rest uncovered 5 minutes. Stir and serve on hoagie or kaiser rolls.
** Note: You must use a thick molasses or tomato based sauce. The sauce will be the main flavor, so use a quality sauce. I used Jack Daniels BBQ, but Sweet Baby Ray's or Stubb's will also be great. This chicken would also be great on a BBQ pizza.

I LOVE BBQ. It's one of my favorite things, but I actually don't eat it very often. This recipe totally hit the spot. It could not have been simpler! I threw it together when I came home for lunch on Wednesday, and by the time Colin and I got home at 6:15, the entire house smelled like BBQ. Yum!

I was a little nervous because I've never "shredded" or "pulled" anything before. But the chicken was so tender, it literally fell apart with a touch of my fork. I used Stubb's sauce and served it on kaiser rolls. I completely agree with Julie, this would be AWESOME on a BBQ pizza. My mom & dad came over that evening so of course, I made them try some as well. My mom was quite impressed and I believe she'll be making it sometime next week. I just might have to join them!

Next week, I WILL be sticking to the theme. I've got big plans for the final week of the challenge, so stay tuned! I just hope next week is a little less stressful!

(For those looking for an update on Operation Paci, so far, so good. He never woke up last night wanting it! He asked for it a few times tonight, but I just had to remind him that it was broken and he seemed to be OK. I expect him to ask for it for at least a week before he realizes that it's REALLY gone. So far though, there have been no paci induced temper tantrums! Score! Although, now that I put it in writing, there's certainly one in my near future. Physics.)

Congrats on operation Paci! i am sure soon enough he will stop asking - yet somewhere down the line out of the blue he will probably bring it up! they are funny that way!

thanks for the comments on the boys rooms - we are enjoying giving nik a "big boy" room, so he feels special. i will post more pics later!
