You know how I keep saying I'm going to get better at posting this in a timely manner? Uhm...well...I lied. I'm probably not going to get better at this. This weeks theme was appetizers and, as far as I'm concerned, brownies are most certainly an appetizer. I found this recipe over at Good Eats n Sweet Treats during a rather nasty chocolate craving. Chocolate? Check. Caramel? Check. What could be better than that? Nothing. So, here we go!
Caramel Brownies (looks like she got this from VeryBestBaking.com)
1 pkg (18.25 oz) chocolate cake mix
1 cup chopped nuts (I don't like nuts, so I omitted these)
1 cup evaporated milk, divided into 2/3 cup and 1/3 cup
8 tbsp (1 stick) butter or margarine, melted
35 (10 oz pkg) caramels, unwrapped
2 cups (12 oz pkg) semi-sweet chocolate morsels
Preheat oven to 350° F (*325° F if using a dark pan)
Combine cake mix and nuts in large bowl. Stir in 2/3 cup evaporated milk and butter (batter will be thick). Spread half of batter into ungreased 13 x 9-inch baking pan.
Bake for 15 minutes.Heat caramels and remaining 1/3 cup evaporated milk in small saucepan over low heat, stirring constantly, until caramels are melted. Sprinkle morsels over brownie; drizzle with caramel mixture.
Drop remaining batter by heaping teaspoon over caramel mixture.Bake for 25 to 30 minutes or until center is set. Cool in pan on wire rack. Cut into 24 squares.

Did I take a picture of the final product? Of course not! Possibly because I was busy shoving brownies in my mouth, although that is a detail I cannot confirm.
So! The rundown! This recipe was very easy to follow. I was a bit worried with having to cook a little, remove from the oven, and then cook some more, that sounded like a good way for myself and/or my kitchen to get hurt. As it turned out though, I had nothing to worry about. I am a culinary champion. The brownies were, of course, delicious. They are very very rich, and the caramel is the PERFECT addition to them. Best enjoyed with a glass of cold milk. Or, a giant scoop of vanilla ice cream...hmmm...perhaps next time I'll have a little competition. Which tastes better with the most amazing brownies ever? Milk or ice cream? Sounds like a question everyone will need the answer to and I'm happy to make the sacrifice to provide that answer. You are welcome.
