What's that saying? Better late than never??
I know this week's theme was vegetarian, but...I don't really like vegetables so...chicken it is! This week I turned to my friend Julie for a good recipe. She's our resident Martha Stewart and I knew she'd have something good! And so I present Honey Garlic Stir Fry!
Honey Garlic Stir Fry
1 lb. chicken, sliced
3 c. stir fry veggies, mostly cooked (I thought I had veggies in the house and as it turned out, I didn't. So we just had chicken)
1/2 c. Italian Dressing
2 T. Honey
4 cloves garlic, minced.
3 c. cooked rice
Cook chicken and garlic in skillet sprayed with cooking spray for 5 minutes. Add dressing and honey, cook 3 minutes. Add veggies and cook 2 minutes or until hot. Serve over rice.
The results? Well, I really had no doubt that Julie would pull through for me because...well, she's a badass in the kitchen. I LOVED this. I thought that maybe the honey would be too sweet, but the italian dressing complimented it perfectly. Of course, I love ANYTHING with garlic in it. I had a friend over for dinner that night (Hi Katie!) and she loved it too. This took maybe 20 minutes to throw together and is one of those dishes you can make after a busy day without any stress. Next time I'll throw some veggies in there, although it was perfectly acceptable without. I did let it cook a few extra minutes (per Julie's suggestion) to let the sauce thicken and served it over Jasmine Rice because that's my favorite!

Nice! I think some peppers and snap peas would do very well in that stir fry!
