So this week I've been trying desperately to be a good eater. By Wednesday I'd eaten so much salad I thought I would explode so I started trolling the Internet for "low-fat chicken" recipes and found this. I thought they would be terrible, but they had good reviews so I tried them anyway. People, these are phenomenal!
For those of you non-clicky types, here's the recipe:
1/4 cup flour
1/4 cup dry breadcrumb
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 lb chicken tenders
1/2 cup low-fat buttermilk
olive oil (the actual recipe calls for 1 T. but I think you need some more to get it the crisp "Fried")
Directions
1. Combine the first 6 ingredients in a shallow dish, and set aside.
2. Combine the chicken and the buttermilk in a plastic zip-top bag; seal and marinate in refrigerator 30 minutes.
3. Remove the chicken and discard the marinade.
4. Pour olive oil in skillet to just barely covering the entire bottom of the pan.
5. Heat oil over medium heat.
6. Dredge a few chicken strips at a time in breadcrumb mixture, tossing to coat.
7. Add chicken to the pan, and cook 3 minutes on each side or until done.

Usually the words "low-fat" in a recipe immediately turns me off, but these were AWESOME! Best of all, they're kid friendly without being loaded with fat! I also had to use a bit more olive oil than the recipe called for. I cooked the chicken in two sets of three and towards the end, the pan was getting a bit dry. Next time I make them, I might try a different combination of herbs. Maybe some chili powder for a little bit of spice.
All in all, these were easy to make and very, very good! I would recommend them to anyone for a fast, simple, (mostly) healthy dinner.

Isn't it awesome when really tasty food is pretty good for you? I think it happens more often than one might think, but it takes much more effort. Can you imagine if you got this type of dish out at some restaurant? Yikes.
